The Pattersons are very involved with Clay County (TN) Young Farmers, and they contributed some of their favorite recipes to the organization’s Farm to Fork cookbook.
Here they share their quick and easy recipe for Oven Roasted Sweet Potatoes, a healthy twist on a holiday vegetable favorite.
April’s Oven Roasted Sweet Potatoes
Preheat oven to 350 degrees. Peel and cut 2 lbs. of sweet potatoes into 1- inch pieces. Put in a 9×13-baking dish.
Whisk together 2 tbsp. olive oil and 2 tbsp. honey. Pour mixture over potatoes and toss to coat. Sprinkle with 1 tsp. salt.
Bake for 1 hour until potatoes are tender. You will need to turn the potatoes occasionally.
