Ingredients:
1⁄2 Tsp Rosemary
1⁄2 Tsp Thyme
1/8 Tsp Garlic Powder
1 Tbsp Salt
1⁄2 Tsp Ground Black Pepper
2 Tbsp Butter or Vegetable Oil (or Ghee for Whole30) 3 Cornish Game Hens
10-12 Baby Carrots
1 Sweet or Yellow Onion (Cut in 4ths)
1 Large Peeled Potato (Cut in Half, Then in 4ths)
4-6 Large Fresh Broccoli Florets
2 Tbsp Water
Thaw the game hens overnight in the refrigerator.
When ready to fix, rinse and pat dry the game hens, then place in an aluminum baking pan while preparing ingredients and preheating oven. *Leave uncovered to bring closer to room temperature. *Preheat oven to 350 degrees.
In a small bowl, mix together the dry ingredients and set aside. Melt the butter (oil or Ghee) in a separate bowl.
Using a basting brush, cover the game hens with the melted butter then sprinkle the dry mix ingredients over all sides of the game hens.
Place the carrots, onion, broccoli and potatoes around the game hens in the pan, pour the water in the pan to provide moisture, then cover all with aluminum foil sealing the sides.
Bake for One (1) hour. For crispier skin on the game hens, turn oven on BROIL then remove foil and return to oven during the last 3-6 minutes of baking. (Watch closely to avoid burning).
