Cooking at Southern Grace Farmhouse

Honest Abe Log Homes co-owner April Patterson and her husband, Nick Patterson, love cooking together. They often use recipes from the Clay County (TN) Young Farmers’ Farm to Fork cookbook, but the recipe for Nanny’s Chicken and Rice contributed by Molly Cooper has particular significance for the Pattersons. Molly is Honest Abe’s in-house designer, and her creativity and expertise helped the Pattersons bring their ideas to life for their new 10″ round log home’s modern farmhouse kitchen as well as the rest of their house on their Acres of Grace Farm.

Recipe

1 1/3 cup of uncooked rice

1 med chopped onion

I can of cream of chicken soup

1 can of cream of celery

1 can of water

½ stick of melted butter

4 – 6 chicken tenders (raw without skin)

 

Assemble your ingredients and remove skin from the chicken.

Place uncooked chicken on top of rice mixture. Top with butter, salt and pepper.

Generously coat the casserole baking dish with non-stick spray.

Bake at 350 degrees covered for one hour.

Mix all the ingredients together except chicken and butter.
